Yellow chicken soup

This curry potato chicken soup is easy to make in 30 minutes. It is flavored the nordic way with yellow curry powder spice mix and heavy cream. 


Potatoes Carrots Corn Onion Garlic Chicken Heavy cream Curry powder Chicken stock

1. Thinly slice the chicken breasts.


2. Peel and finely chop the yellow onion.

3. Peel and dice the potatoes and carrots.

4. Fry the sliced chicken breast, onion, pressed garlic, and spices. 

5. Add the diced potatoes and sliced carrots to the pot. Cover with water and add in the stock cubes. Bring to boil and let cook until tender.

6. Add corn. Pour in the heavy cream and stir well. Simmer for an additional 5 minutes.

Serve with fresh cilantro and crusty bread.
