Finnish Rice Porridge

Rice pudding

A milk-based porridge cooked with short grain starchy rice and served with cinnamon, sugar or a mixed fruit soup.


Short grain starchy rice Water Full fat milk Butter Salt

1. Bring the water to a boil in your large pan. 


2. Add the rice, water, salt, and butter. Bring to a boil, then lower the temperature to medium heat.

3. Let the water absorb into the rice, so it thickens up a bit, this takes about 5 minutes. Then you can add the milk. 

4. Let your porridge simmer on medium to low heat for around 40 minutes so that the consistency thickens up.

Traditionally served with cinnamon, sugar and some milk.  Some like it with plum soup-luumukeitto or with sekametelisoppa a soup made of dried mixed fruits.
