Potato salad with peas and mint

1. Peel and dice your potatoes. Bring water to a boil and add the diced potatoes in salted water. Cook until tender.


2. Place the frozen peas in a bowl and cover with boiling water.

3. Whisk together the white wine vinegar, olive oil, garlic powder, flaky sea salt, and black pepper in a bowl. Add in chopped mint leaves. 

4. Wash your leek and chop it into small pieces.

5. Drain the potatoes. Mix the drained peas, sliced leek, and potatoes with the sauce. 

Serve as lunch with boiled eggs, smoked salmon or grilled chicken or as a side salad for potluck.
