Orange kissel-Finnish Appelsiinikiisseli

Finnish orange kissel (appelsiinikiisseli) recipe – a light and refreshing Scandinavian dessert made with fresh oranges and orange juice served with whipped cream or vanilla foam.

Ingredients
  

  • 2 cups orange juice (100% pure) 500 ml
  • 2 fresh oranges
  • 2 tablespoon potato starch (mixed with 2 tablespoon cold water)
  • 2 tablespoon sugar
  • 1 cup whipped vanilla sauce to serve with

Instructions
 

  • Cut off the top and bottom of each orange so the flesh is visible. Stand the orange upright and cut away the peel and white pith, following the shape of the fruit. Slice the flesh into segments between the membranes. Cut into smaller pieces or save as decorative wedges. Squeeze the remaining membranes to collect extra juice.
  • Bring the orange juice to a boil in a saucepan. Add sugar or stevia. Mix the potato starch with cold water in a small glass. Pour the starch mixture into the hot juice in a thin stream while whisking constantly. Let it bubble once, then remove from the heat. Stir in the orange pieces
  • Let the kissel cool to room temperature, then refrigerate until chilled.
    Spoon the cooled orange kissel into bowls. Top with the vanilla foam and a sprinkle of cinnamon.

Notes

Vanilla yogurt or whipped cream works well instead of cottage cheese
