1cupPorridge rice. Round, short grain one like pearl rice or sushi rice are also ok.

Instructions
If you use Scandinavian porridge rice it does not need rinsing. If you use sushi rice, you can rinse it in a strainer. You don't need to rinse all starch away since you want it to be a bit more sticky than sushi. The water does not need to be totally clear.
Melt the butter in your pan. Add the rice, water, salt, and one cinnamon stick to a medium-sized pot. Cinnamon is optional.
Cook the rice-water mixture on high heat so it starts to boil. Next, reduce the heat to medium so it simmers. Cook it for about 10 minutes and stir once in a while.
Add the milk and continue to boil on medium heat for around 30 minutes. Make sure to stir it regularly so it does not burn.
Notes
Tip: A double boiler pan is handy for milk porridges so they won't burn. Serve the porridge with cinnamon, sugar, a spoon of butter, and milk on the side, or with berry soup. To make vegan porridge make it with plant-based milk like soy milk. Use margarine instead of butter.
