Swedish rice porridge

Rice porridge that is eaten sweet as lunch, breakfast or dessert.

Ingredients
  

  • 1 cup Porridge rice. Round, short grain one like pearl rice or sushi rice are also ok.
  • 2 tablespoon butter
  • 2 cups water
  • ½ teaspoon salt
  • 3 cups full fat milk.
  • 1 cinnamon stick (optional)

Instructions
 

  • If you use Scandinavian porridge rice it does not need rinsing. If you use sushi rice, you can rinse it in a strainer. You don't need to rinse all starch away since you want it to be a bit more sticky than sushi. The water does not need to be totally clear.
  • Melt the butter in your pan. Add the rice, water, salt, and one cinnamon stick to a medium-sized pot. Cinnamon is optional.
  • Cook the rice-water mixture on high heat so it starts to boil. Next, reduce the heat to medium so it simmers. Cook it for about 10 minutes and stir once in a while.
  • Add the milk and continue to boil on medium heat for around 30 minutes. Make sure to stir it regularly so it does not burn.

Notes

Tip: A double boiler pan is handy for milk porridges so they won't burn. 
Serve the porridge with cinnamon, sugar, a spoon of butter, and milk on the side, or with berry soup. 
To make vegan porridge make it with plant-based milk like soy milk. Use margarine instead of butter.
